"Elevates honey to an amazing level of sensuality, taste, and health."
Spring Honey comes exclusively from our Chesterhaven Beach Farm, where our bees pollinate an expansive collection of wildflowers, black locust and fruit trees, lavender, and grains from the height of Spring into early Summer. Exquisitely flavorful, bright, and delightfully floral in both aroma and taste, Spring Honey is the grand cru of our offerings.

Spring Honey is Floral, Sweet, and Exclusive to us.
Spring Honey is our estate-grown grand cru honey that the bees produce during springtime from April to mid-June. We allow the capped frames to cure for a few weeks and harvest somewhere around the second week of July just before the goldenrod starts to bloom. Nothing against goldenrod, it seems to add a layer of complexity that doesn't flow well with the ultimate floral nose that this honey offers up.
Simply put this honey is absolutely delicious and by far the best-selling honey from our Honey House. We produce approximately 30-40 gallons of this artisanal honey each year regardless of the number of hives we have.
Black locust is one of the largest nectar sources on the Eastern Shore of Maryland. Our Spring Honey has a lower acid content than other honey. Its high fructose content means that it will stay liquid for a long time.
Spring Tasting Notes
Color: Bright yellow to light amber Aroma: floral beyond your wildest imagination Taste: Very bright, bold and floral. It possesses a moderate sweetness level and has tasting notes of jasmine, lavender, pollen, and earth.
This honey being both bold and fragrant goes very well with greek yogurt or bold cheeses and nuts. Try in raw food recipes, on fruits and veggies, on lavender ice cream and in chamomile tea.
