Spring Honey is our estate-grown grand cru honey that the bees produce during springtime from April to mid-June. We allow the capped frames to cure for a few weeks and harvest somewhere around the second week of July just before the goldenrod starts to bloom. Nothing against goldenrod, it seems to add a layer of complexity that doesn't flow well with the ultimate floral nose that this honey offers up.
Simply put this honey is absolutely delicious and by far the best-selling honey from our Honey House. This honey being both bold and fragrant goes very well with greek yogurt or bold cheeses and nuts. Try in raw food recipes, on fruits and veggies, on lavender ice cream, and in chamomile tea.
