Black Locust Honey is a monofloral varietal that's created when bees pollinate the fragrant, wisteria-like blooms of black locust trees (Robinia pseudoacacia) in May and June. Sweet and floral in flavor with base notes of wax and vanilla, this is a fantastic variety to use on fluffy biscuits, with mild cheese, or blended with vanilla bean and butter. Light yellow-green in color. Also known as Acacia Honey in Europe.

Black Locust Honey is light and floral, with a delicate sweetness and prominent vanilla flavor profile. Produced from the nectar of the black locust (Robinia pseudoacacia) tree, which is an important source of food for bees in the Northeastern United States. These trees are very adaptive and grow in a wide range of environments, leading them to be invasive in some locales - though, they’re very beneficial for improving soil quality and providing a habitat for song birds, small mammals, and producing nectar for pollinators.
We recommend trying this honey on biscuits and French toast, drizzled over mild cheeses, spooned over ricotta and fresh fruit, and mixed into butter with vanilla bean and spread onto crusty bread.
